Hey there, all!  How is everyone on this fine Tuesday?  Personally, I’m tired.  No, not just regular tired. I’m tiiiirrrreeed.  Lately I haven’t been sleeping well at all.  In the past I’ve told you all about my freaky dreams.  They’ve subsided lately.  Nope, now the culprit is…the pillow!

I don’t know about the rest of you, but I am so picky when it comes to everything involving sleep.  I need the temperature to be a certain way, first of all.  Too hot and I just get annoyed.  And annoyed people don’t sleep, am I right?  But I’m naturally a cold person, so if it’s too cold my whole body just becomes liquid nitrogen. ⛄️

I’m also picky about how many blankets go on the bed and how thick they are.  I can’t abide a scratchy blanket.  I’m all about the down or down-alternative comforter.  A comfy Amanda is a happy Amanda. Most people would probably think I resemble a burrito when I sleep.  😄

But really, there’s nothing worse than an uncomfortable pillow, is there?  Mine just weren’t giving me enough support anymore.  I like a firm pillow, but not those crazy firm pillows you get at hotels sometime that make you wake up with a crink in your neck.  And don’t even get me started about the ones that conform to your head.  Whenever I use those my head feels stuck down in the Grand Canyon.  The search continues!

No matter how tired we are after a night of meh sleep, good food always has a way of brightening out moods, doesn’t it?  I personally love sitting in weird coffee shops, eating a fabulous, hearty sandwich, and people-watching.  And this pesto reminds me of something you’d find at one of those places.

First off, I love pesto.  I spread it on sandwiches, burgers, pasta, and I put it in mashed potatoes.  Don’t judge me. 😀  And I really like making my own pesto.  But I like to mix it up every once in a while.  And the result is this fun Thai peanut pesto.  The green color comes not from basil, but from a combination of romaine lettuce and cilantro.  And then we add a few more of my favorite things: Thai sweet chili sauce, roasted peanuts, sesame oil…yum.  I feel like I’m in that coffee shop now.

This is such a fun pesto when you want to mix it up a little.  I love putting it directly on my salads of dark, hearty greens, avocado, nuts, and peppers up the wazoo. ✌️  But let me tell you…it is nice on grilled cheese…NICE.  A few thick slices of provolone, this pesto, and some good bakery bread.  What more could you want?

Thai Peanut Pesto
  • 3 cups coarsely chopped romaine leaves
  • 1 cup fresh cilantro
  • ⅓ cup roasted peanuts
  • 2 tbsp peeled, chopped ginger
  • 2 tbsp sweet chili sauce
  • 1 clove garlic
  • Juice of 1 lime
  • ⅓ cup vegetable oil or olive oil
  • 2 tbsp roasted sesame oil
  1. In a food processor add in the romaine lettuce, cilantro, peanuts, ginger, sweet chili sauce, garlic, and lime juice. Pulse.
  2. With the machine still running, add in the vegetable oil and sesame oil. Pulse until smooth.

    There’s noting worse than not getting a good nights sleep. I hope you find the perfect pillow soon! I’ve never tried a peanut pesto. Sounds yummy!

    Not sleeping is the worst and when I don’t get a full 8 hours, I turn into a big old grouch. This pesto would totally brighten up my day though – look at that color!

    Woooooah, girl. I am so amazed by this peanut pesto. SUCH a uniquely brilliant idea, I’ve got to give a go. This would be so so good with chicken skewers! Need to try.

    I am such a picky sleeper – everything has to be JUST right (temperature, pillow, etc). My poor husband! But meantime, I would definitely not be picky about this pesto…it looks just perfect!

    It’s a pesto kind of week! This peanut pesto sounds so good! I need to try it! I make a ‘peanut butter’ sauce with thai ingredients, which I love…this will be added to my repertoire!

      Oh, your peanut butter sauce sounds amazing! I’d make some kind of Thai-inspired pizza with that. I used to do that back in the day. Yum!

    Lack of sleep is so draining! I’m totally picky about it too! Even my fiance sleeping to close to me causes problems! Goodness lol. But this pesto looks delicious!

    I have seen many people who are really picky about sleep. And the lack of sleep is indeed very tiring. I hope you get a good night sleep tonight. I am so much in love this dreamy creamy texture of this Thai pesto. Can’t weight to try this.

    Gurl, I’m picky about everything involving sleep too! And I have terrible insomnia, so I feel you on being tired! I hope you are able to get a good nights sleep soon! I absolutely adore pesto, so this thai peanut pesto is calling my name!! I would have never thought to combine Thai flavors, peanuts and pesto! Genius! Cheers!
