Hello, everyone!  How’s the week going? How’s the weather?  Last weekend was pleasantly cool.  By the way, how come the temperature never steadily goes down?  Instead, it always has to go from 90 degrees and humid to 60 degrees and a little breezy, just so your body gets really confused.

Anyway, the temperature may be up a little again, but now I’m longing for all things fall.  Especially since most of the kids around here started school this week.  Most of them actually started on Wednesday, which I don’t really get.

Anyhoo, all of this fallish activity has me craving pumpkin spice lattes and dreaming of my never-ending drawer of scarves. 😀

Another thing I’ve been dreaming of lately is a recipe from my childhood.  Of course when you’re a little kid you hate a lot of the things adults eat.  I hated vinegary coleslaw, and now I love it.  I hated orange chicken and now I love it.  And somehow, I hated snickerdoodles…what did they ever do to me?! 😉

Another thing I hated?  A cucumber vinegar side dish that you’d see occasionally at other people’s houses.  What was that stuff?  Ick!  Cucumbers and vinegar and onions (sometimes)!  Eww. 😄  How the times change, huh?  Well, since I’ve grown a taste for all things vinegary I thought I’d try to dig around and find a recipe that reminded me of the dish I used to turn down.  Silly, silly kid.  I didn’t know what was good for me.

This is a great side for the summer.  And to tell the truth, I wouldn’t be against chopping the cucumbers up really small and putting this on a burger or hot dog.  That’s just the way I am!  ✌️

Tangy Cucumbers
 
Ingredients
  • 3 medium cucumbers, diced thin
  • 1 medium onion, chopped (optional)
  • ½ cup white vinegar
  • ¼ cup sugar
  • Salt and pepper to taste
Instructions
  1. Combine all ingredients and stir.
  2. Place in a container in the fridge for a few hours for the flavors to meld. Stir occasionally.

    The weather here has definitely cooled off a bit, but it’s no where near “cool”. BUT it is making me a little excited for Fall! I loooove me some pickled cucumbers, so these babies are calling my name! Gimme ALL the TANG! 😉 Cheers!

    I’ve never been a fan of the vinegar cucumbers, but my husband loves them, so I make them all the time for him. He would totally love your version too!

    It wouldn’t be summer without vinegary cucumbers! One of my favorite ways to eat them. For some reason I like them so much better than pickles. 🙂

    Isn’t it funny how much our tastes change as we grow up?! These cucumbers look so bright and flavorful! I need to get some of the delicious cucumbers from the farmers market this weekend to make this with – yum! Adding them to a burger sounds like a fabulous idea 🙂

    Just when I thought the temps were cooling down, we get surprised with 95-degree heat plus full humidity today. Awesome. I definitely need something like your cucumbers to keep me cool today. 🙂

    I am not a big fan of cucumbers, though I do love pickles! Isn’t that strange? My husband, on the other hand, LOVES cucumbers, so I think he would absolutely adore this recipe. Pinning to try out!
