Hello, everyone! How’s the week going? How’s the weather? Last weekend was pleasantly cool. By the way, how come the temperature never steadily goes down? Instead, it always has to go from 90 degrees and humid to 60 degrees and a little breezy, just so your body gets really confused.
Anyway, the temperature may be up a little again, but now I’m longing for all things fall. Especially since most of the kids around here started school this week. Most of them actually started on Wednesday, which I don’t really get.
Anyhoo, all of this fallish activity has me craving pumpkin spice lattes and dreaming of my never-ending drawer of scarves. 😀
Another thing I’ve been dreaming of lately is a recipe from my childhood. Of course when you’re a little kid you hate a lot of the things adults eat. I hated vinegary coleslaw, and now I love it. I hated orange chicken and now I love it. And somehow, I hated snickerdoodles…what did they ever do to me?! 😉
Another thing I hated? A cucumber vinegar side dish that you’d see occasionally at other people’s houses. What was that stuff? Ick! Cucumbers and vinegar and onions (sometimes)! Eww. 😄 How the times change, huh? Well, since I’ve grown a taste for all things vinegary I thought I’d try to dig around and find a recipe that reminded me of the dish I used to turn down. Silly, silly kid. I didn’t know what was good for me.
This is a great side for the summer. And to tell the truth, I wouldn’t be against chopping the cucumbers up really small and putting this on a burger or hot dog. That’s just the way I am! ✌️
- 3 medium cucumbers, diced thin
- 1 medium onion, chopped (optional)
- ½ cup white vinegar
- ¼ cup sugar
- Salt and pepper to taste
- Combine all ingredients and stir.
- Place in a container in the fridge for a few hours for the flavors to meld. Stir occasionally.
