Ah, breakfast.  The best meal of the day.  But you know for a long time I was used to eating most of the breakfast foods I loved at for supper. Pancakes, waffles, French toast: growing up I loved having these in the p.m.  And how about breakfast?  Well…🙂

How good are you guys about eating breakfast?  When I was a kid I was terrible at it.  I loved cereal, but I usually had it for a snack after school.  And if I did have breakfast it was on the weekend while watching cartoons.  So most days when I was a kid I got up and didn’t eat until 11:00 or 11:30 at school when they fed us lunch.  It’s not that I didn’t have breakfast put in my face.  I just had absolutely no desire to eat in the morning.  No hunger at all.  So I ate a lot of portable Pop Tarts.

I can’t even believe that was me!  How could I not have been hungry in the morning?  And not hungry for breakfast??!  That’s when all the best foods are rolled out.  Now in the morning I wake up to my stomach growling. 😀

All of those bad habits of my changed when I was 16 and read an article about how people who eat breakfast are healthier.  So I started eating it every morning.  And hey, it wasn’t even Fruity Pebbles.  (Well…maybe every once in a while it is).  I haven’t gone without eating breakfast since then.  I turn really hangry real fast if I don’t eat something in the morning.

So if you’re anything like I used to be and you want something quick and easy for breakfast, here is a smoothie for you.  And it’s so healthy too.  Delicious orange and frozen banana are pulsed together with almond milk and a tablespoon of cashews.  Do you guys love putting unsalted nuts in your smoothies?  The texture is great.  And it’s fun to play around with the different kinds to try different flavors.

This smoothie tastes like sunshine in a glass.  It always makes me smile.  It’s my go-to breakfast when I’m not in the mood for oatmeal.  I hope you like!

Sunshine Smoothie
 
Ingredients
  • ½ of a medium orange
  • ½ of a medium frozen banana
  • 1 cup unsweetened vanilla almond milk
  • 1 tbsp unsalted cashews
Instructions
  1. Combine all ingredients in a blender. Blend until smooth and serve immediately.

    Ooh, this looks delicious! I love smoothies. It’s funny – my brother can eat three large meals for breakfast, but I really could go without breakfast. However – I do eat. Because it’s healthy 🙂

      Yeah, it’s crazy how I’ve changed over the years. Now if I don’t eat within an hour or so after getting up I’m filled with Hulk anger. 😄 Luckily my favorite color is green so it works out. Lol. 😉

    Breakfast for dinner is pretty much the best! I’ve gotten better over the years at eating breakfast…I love it, but most of the time, I’m too lazy to make it. But I do love smoothies! This version looks SO good, Amanda! Love the fresh flavor!

      I know exactly what you mean. Who has the energy to make waffles early in the morning? I wish I did, but nope. It takes me until about 10:30 in the morning to get out of auto-pilot. Take care!

      I am with you on that! Plus my stomach is annoyingly loud when it rumbles, so I like to avoid that happening.

    I’m really good at eating breakfast, as in I NEVER miss breakfast. Ever. But it’s only because I get seriously HANGRY if I don’t eat within a couple hours of being up. And I happen to love breakfast for dinner… you could say breakfast food is my favs. Ever. 😉 Loving this smoothie, girlfriend! The name says it all – Sunshine! Perfect! Cheers, dear!

      Thanks so much! I get hangry in a serious way too. It’s especially bad on long road trips. If hours and hours go by without a meal and I don’t have pretzels or something to at least snack on, I turn into a crazy person.

    Oh I hear you! I can eat breakfast foods anytime of the day. Cereal for dinner, toast for lunch and pancakes are good ANYTIME 😉 Love this gorgeous smoothie! What a great way to start the day!
