Peanut Butter Rice Krispies Brownies

I don’t know about you, but sometimes I need a real chocolate fix.  I mean a REAL chocolate fix.  The kind where you order the most over the top pastry at the bakery (Snickers eclair, hello!), or spoon that extra dollop of hot fudge on your ice cream before hunkering down with your favorite book or movie.  I just heard a great quote from writer/actress Mindy Kaling: “I like to live a life where I don’t consider any of my pleasures guilty pleasures.”

Hoorah!  Can I get that emblazoned across my forehead?  Perhaps we should keep that quote in mind when considering today’s chocolate dessert of choice: peanut butter Rice Krispie brownies.  Yep.  All of that beauty shoved into a nice neat little package.  Cue to fanfare. 🎉

Recently I was looking around the interwebs, as the cool kids call it, searching for a recipe to use the plethora (great word) of part packages of chocolate chips in the cupboard.  Ever have this issue?  I make something, only use part of the package of chocolate chips, stick it in the cupboard, then when I make something new I get a new package of chips.  After all, you want to make sure you have enough.

Anyway, I was looking for the perfect way to use them, and I just wasn’t it the mood for cookies (shock!!).  Then I found this little beauty.  I had to do some reworking of the original recipe, but that’s half the fun.  I didn’t have peanut butter cups (double shock!!), but I did have peanut butter chips.  I didn’t have milk chocolate chips, but had a barrel full of semi-sweet.  I’ve always preferred them. Not sure why.  Do you have a preference?

These are simple to put together and the frosting has Rice Krispies.  Rice Krispies!!  I didn’t think this would be such a big deal to me, but it brought back memories of trick or treating and getting those little tin foil wrapped chocolates in the shape of pumpkins or ghosts.  They always had Krispies in them. And they were my favorite.  Mmm Mmm. 😎

I kind of laughed when I took my first bite of this mega brownie.  Someone quick, make that name stick!  It is super indulgent and wonderful.  If the chocolate/peanut butter combination is your thing, make these!  They are great for football games, get togethers, or just hoarding them for yourself. 😉

Peanut Butter Rice Krispies Brownies
 
Ingredients
  • For Brownie Layer:
  • 1¾ cups chocolate chips, divided
  • ¾ cup unsalted butter
  • ½ cup light brown sugar, packed
  • 1½ cups sugar
  • 1½ tsp. vanilla extract
  • 3 large eggs
  • 1 cup all purpose flour
  • ¾ cup peanut butter chips
  • For Peanut Butter Krispie Topping:
  • 1½ cups smooth peanut butter
  • 1½ cups chocolate chips
  • 1 tbsp. unsalted butter
  • 1½ cups Rice Krispies cereal
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Spray a 9x13 pan with baking spray.
  3. Combine ¾ cup of the chocolate chips and butter in a large microwave safe bowl.
  4. Microwave for thirty second intervals, stirring in between each interval, until the mixture is melted and smooth.
  5. Stir in both sugars until combined.
  6. Whisk the eggs, then add to the chocolate mixture.
  7. Whisk in the vanilla.
  8. Fold in the flour until just combined.
  9. Stir in ½ cup of the chocolate chips.
  10. Pour into the pan and bake for 25-30 minutes, or until set in the middle.
  11. Remove from the oven and sprinkle the peanut butter chips and the remaining ½ cup chocolate chips onto the surface of the brownies, then return to the oven for 3-4 more minutes.
  12. Remove from the oven and allow to cool before making the topping.
  13. To make the topping, combine peanut butter, chocolate chips, and butter into a medium microwave safe bowl.
  14. Microwave for thirty second intervals, stirring in between each interval, until the mixture is melted and smooth.
  15. Stir in the Rice Krispies.
  16. Spread on top of brownies and let it set in the fridge for at least 90 minutes.
  17. These are best at room temperature. In the fridge they can be a little hard.

    I haven’t had rice krispie treats in forever, much less a peanut butter chocolate one. I remember some of my favorite childhood memories with making these with my mom.

      That’s one of my favorite memories too! My mom and I would always use more marshmallow than the recipe said, because why not? Haha. 😄
