I’m devoted to oatmeal.  I generally have it for breakfast each day.  But even someone who has the deep emotions that I have craves a little something different every once in a while.  And this is definitely something different.  But trust me: it’s a good kind of different  😉

Who here loves morning glory muffins?  I can’t get enough of that moist texture.  And how about the carrots that make it remind you of a certain wonderful cake?  AND I really love when they have a little pineapple in them.  So one day I just wondered why not make that into a smoothie?  So I put on my mad scientist hat and created one.  It’s alive!!!!  And I’m really excited about it! 😀

I’ve been making a lot of smoothies lately.  It’s a great way to pack more fruit and vitamins into your diet. And I’ve been having veggie smoothies too.  How do you feel about veggie and fruit smoothies?  The first time I made one I thought “Wow, this is a little strong,” but I have to admit that they’re growing on me.  I always thought I was getting a good amount of vegetables each day, but since I started drinking smoothies I feel a lot better.

But today’s smoothie doesn’t have any kale or spinach in it, so you don’t have to worry that it’s going to be weird, wacky, or wild.  We’re just sticking with carrots, and we already all know how awesome carrots are in desserts.

This is a really satisfying and unique smoothie.  You have the pineapple, apple, nuts, carrots, and I even added some oats…cuz I look out for your fiber intake like that. ✌️

Not only is this a great breakfast, but it’s a nice healthy snack for any hour of the day.  Feeling a little hungry after supper?  Have one of these.  Hunger gone.  Those oats will fill you up.  So on days when you want a glorious morning, but turning on the oven gives you the blahs, just deconstruct and drink it!

Ingredients
  • 2 medium carrots, chopped
  • ½ cup fresh pineapple
  • 1 apple cut into large chunks
  • 1-1¼ cups almond milk, depending on thickness preference
  • 1 tsp raisins, or more to taste
  • ⅓ cup old fashioned oats
  • 1 tbsp chopped pecans
  • ¼ tsp cinnamon
Instructions
  1. Place all of the ingredients into a Vitamix or similar high power blender. Mix until completely smooth.

    Im with you on the oatmeal! I pretty much have it all year round – but you seriously can’t beat a good smoothie either (can I have both?) haha 😉

    This is such a hearty smoothie! Those oats will see you through every time. And I’m glad there’s no spinach. I love eating spinach, but not drinking it!

      Thanks! I’ve been drinking a little spinach in my smoothies lately, but boy do you have to put a bit of fruit in there to get rid of that weird taste. I feel like Dr. Frankenstein.

    This is such a fun smoothie, Amanda! I love morning glory muffins too, so I’m sure I would be making this smoothie all the time. It’s so nice to switch up your breakfast routines every once in awhile, especially when gorgeous smoothies are involved!

      Thanks, Dorothy! It’s a nice way to get in some veggies, but it doesn’t have that weird veggie smoothie taste. 😉
