Cilantro Coconut Pesto

So if I was a practical person this post would probably be the one dedicated to that gingersnap cake I posted a little while ago.  After all, this Friday is my birthday. 🎉  But instead, why don’t we mark the occasion with a lil’ cilantro coconut pesto instead?  Sounds good to me!  I’m a pesto freak, after all.

Boy, I remember when I was little I would count the days until my birthday.  Of course there was always the realization that only a couple weeks after my birthday school would start again.  But somehow I always managed to block that part out.  After all, BIRTHDAY!

Nowadays things are more laid back, and that’s just fine with me.  I actually like other people’s birthdays better, because I get to spoil them by making meals, desserts, and funny little hats.  Because you’re never too old for funny little hats on your birthday, right?  😀

I have many memories of my birthday being downright HOT and crazy humid.  Lots of the early birthdays were spent at the nearby swimming pond.  Nowadays, I just like to celebrate my birthday with food, and since it’s summer, why not take advantage of the awesome summer flavors happening right now?

I know I had another pesto post not long ago, but what can I say?  My pesto love knows no bounds.  This one is filled with cilantro and has the amazing addition of coconut milk.  Stir this into some pasta and make a summery pasta salad.  Perfect for BBQs and picnics.  What could be better than that?

And personally I just love dunking vegetables in it or adding it to salads just to jazz things up.  And just imagine the flatbread you could make with this spread on top.  Mmm.  Sounds downright celebratory to me!  😀

P.S. Sorry about these terrible pictures.  This is what happens when your knee starts gettin’ fussy and you start getting a touch annoyed.

Cilantro Coconut Pesto
 
Ingredients
  • 4 cups fresh cilantro
  • 3 chopped scallions
  • ⅓ cup toasted cashews
  • 1 small seeded jalapeño
  • 1 garlic clove
  • 1 tbsp peeled, chopped ginger
  • Zest and juice of 1 lime
  • ½ tsp Kosher salt
  • ⅓ cup canned coconut milk
Instructions
  1. Purée all ingredients except coconut milk together in a food processor. With the machine still running, and the coconut milk and pulse until smooth.
