Hey all! I hope you’re weekend is going swimmingly. People need to say swimmingly more, by the way. So today is Saturday and it’s a great day. Anyone know why? Because Outlander season 2 starts today. Excuse me while I geek out. I’ve read all the books so I already know everything that happens, but who cares? Plus this season introduces one of my favorite characters: Fergus. So much sass. 😉 Plus we’re going on I think week three now of cold, windy, and intermittent rain, so if that isn’t an excuse to stay in with coffee and something good on, then I don’t know what is.
Despite what the weather seems to be saying, I’m guessing there is still in fact a bright orb in the sky commonly referred to as the sun. And one would expect that at some point it will shine for more than five minutes at a time. And apparently it still gets warm? Maybe? Somewhere? If that’s the case and summer does eventually get here, we might want to break out the fruits and veggies.
I’ve been trying to really up my veggie intake for the past couple of months, and I’ve found that the best way to get them in is in smoothie form. I don’t have a juicer, but high powered blenders work just fine for people who don’t want to spend the extra money.
I have one of these bad boys every single day. The pure spinach power! I feel like this is an appropriate time for a Popeye joke. Somehow I still don’t have those arm muscles, though. 😀 Believe me, you feel pretty darn healthy after eating a bunch of spinach, a whole cucumber, two carrots, and a nice serving of pineapple. The first time I had one I imagined my body thinking “I don’t know what you’re doing, but thanks! But really, no cake?”
The pineapple does a pretty good job of giving a nice subtle sweetness to this smoothie. And of course you can always adjust to your taste preferences. When your smoothie is blended feel free to pour it through a cheese cloth or a very fine mesh sieve to remove any of the thicker fiber bits. As for me, I usually just drink it as it is. A little fiber never hurt anyone, right?
This is a great pick me up after one or two over-indulgences. I have a post coming up on Tuesday that is pretty indulgent, and let me tell you I needed one of these bad boys after digging into that. 😀
- 1 medium cucumber, cut into large chunks
- 2 medium carrots, cleaned and cut into large chunks
- ½-3/4 cup fresh pineapple or orange slices
- 2-3 large handfuls of spinach
- 1-1½ cups water, depending on thickness preference
- Add all of the ingredients to a high powered blender and mix until smooth. Pass smoothie through a fine mesh sieve if desired to remove any larger fiber bits.
