Apple Cider Vinaigrette

Hello, hello!

Now, I know we all love cookies, pizza, and piles upon piles of fluffy, delicious pancakes.  Mmm, who doesn’t?  😀  I just close my eyes and I’m almost transported to the island of breakfast food…

Sorry about that.  I’m back now.  😉  Sometimes thinking about waffles and French toast does that to me.  🙂

But sometimes you have to put the syrup aside.  Sometimes you have to set down the slice of supreme.  Sometimes you are confronted with those moments in life when you have to eat a salad.

Don’t dread the salad!

How do you feel about salad?  I’ve met people who are absolute salad devotees.  And, on the other end of the spectrum, I’ve met people who act like salad is a four letter word.  😀

So how about me?  Well, let me find my Lettuce Be Friends button and stick it to my shirt, because I love the stuff.

Some say that salad is boring.  And for the most part I agree with this, because what most people think of as salad is pretty boring.  You know what I mean.  Remember when you were a little kid and you’d go to restaurants and you’d get a choice of soup or salad before your meal?  Remember that salad?  It was cut up iceberg lettuce, a few hard croutons, and ranch dressing.  THAT’S IT.  That, my friends, is a boring salad.

But just imagine, if you will, a salad of mixed baby greens, maybe a little spinach, some kale, and perhaps some grilled veggies on top with a smattering of nuts, a few beans, and some apple cider vinaigrette.

Now THAT’S a salad that’ll make you smile.

So if salad happiness is what you’re after, try this vinaigrette out.  It’s tangy, sweet, and a perfect topping for all your salad goals.  😀

Apple Cider Vinaigrette
  • ½ cup honey
  • ¼ cup apple cider vinegar
  • Juice of 1 lemon
  • 1 shallot, minced
  • ¾ cup olive oil
  • Coarse salt and freshly ground pepper, to taste
  1. In a small bowl, whisk together honey, vinegar, lemon, and shallot.
  2. Add the olive oil and stir well to combine. Add the salt and pepper.

    This dressing sounds so fresh and bright!! And I totally agree that salad doesn’t have to be boring at all!!
